Ingredients:

  • 1 tbsp olive oil
  • 2 cloves garlic, minced
  • 1 small onion, diced (optional)
  • 2 medium carrots, sliced
  • 1 zucchini, sliced into half-moons
  • 2 medium tomatoes, chopped (or 1 cup canned diced tomatoes)
  • 2 cups fresh spinach
  • 4 cups low-sodium vegetable broth (or water + 1 bouillon cube)
